How I make subdomains like yada.domain.com.?
And how I define the path and where ?

I would suggest you check out this page on Apache's website which explains virtual web hosting. Depending on your web server configuration you will have a few options.

Try install webmin to your server (free script)
with webmin, you can do anything on your server

try to search 'webmin' on http://www.freshmeat.net/
